Here are five things to know about the new restaurant that is merging food from multiple countries into one menu:
1. It’s fast
In a hurry? Roll On In gets customers in a hurry to their table or out the door in a timely manner.
Guests first opt for either a burrito (with white or brown rice), a bowl (with white, brown rice, fried rice or noodles) or salad.
They then choose one, two or three “meat and greet” proteins such as different styles of tuna, salmon, chicken, gyro, shrimp, crab and tofu.
Up next? A wide array of fillers, including cream cheese, corn salsa, Asian slaw, mixed greens, edamame, avocado, jalapeno and cucumber.
Toppers include crunchy tempura, fried onions, fried wontons, spicy mayo, teriyaki or sriracha.
The whole process takes just minutes to complete.

2. It’s not a traditional sushi place
Roll On In’s sushi concept is a fast casual restaurant, as opposed to traditonal sushi place, but “there’s room for both,” co-owner John Kallenberger said, because “we really don’t compete with sit-down sushi.”
The restaurant, he said, is nontraditional sushi that blends traditional flavors with nontraditional chicken, steak gyro, etc., he said. There’s also fried rice bowls and lo mein noodle bowl along with poke bowls.
“Anyone can eat here, not just sushi lovers,” Kallenberger said.
3. Opening weekend drew quite a crowd
Roll On In’s three-day soft opening last week drew crowds during limited hours, but things really heated up over the weekend as hours expanded.
So many people frequented the restaurant over the weekend that the restaurant posted the following message to its door on Sunday: “We will be closed today. We cold not have anticipated such a warm welcome over the weekend. We ran out of everything! We are making the necessary adjustments tody to ensure this doesn’t happen again. Thank you!”
4. What’s next? A separate place for breakfast
Co-owners Kallenberger and Michael McCarthy, both of Cincinnati, started Roll On In in Lebanon in June 2016, then added locations in Loveland and Clifton before opening in Hamilton.
Now the two men are set to launch breakfast concept called Rise N Shine. The pilot restaurant in Hamilton will mix healthy and classic farm-hearty breakfast fare.
Rise N Shine and Roll On In will share a main entrance in Hamilton but will split space within the 102 Main St. building.

5. Restaurant is third of at least four high-profile openings in 2018
Roll On In follows the opening of two other new restaurants earlier this year: Basil 1791 on High Street and Quarter Barrel Brewery & Pub on Main Street.
Coming later this year is Tano’s Bistro. It’s scheduled to open at The Marcum, a new mixed-used development located across from Marcum Park that will feature 103 apartments, plus first-floor commercial space.
